The mix for this salami comprises carefully selected leg of pork, with the addition of pancetta bacon for the fat part. The minced coarse mix is then stuffed into a natural gut casing,
hand-tied and matured in our cellars.
In the cellar it undergoes natural maturation for 60 days.
